MMC offers a range of whole animal breakdown classes meant to meet people where they are.

Regardless of whether you're a skilled butcher looking to hone your trade or someone who has never picked up a knife, you will find a great class to match your skills and knowledge.

Whole Animal Butchery

At Mpls Meat Collective, the classes are focused on community-education in hands-on butchery, meat cookery, and charcuterie. This rare knowledge can provide an effective and necessary path to rethinking our food system. Plus, food is far more pleasurable to eat when we are involved in the decisions that lead to its preparation. All of the classes are meant to be a hands-on experience for students of all backgrounds and experiences.

Testimonials

  • Student Lindsey Strange

“The hog breakdown with MMC was so fun! I learned more about what makes each cut of meat distinct, picked up some great preparation ideas, and met some cool neighbors while diving right into cutting. I still have so much to learn, but spending time with an experienced, knowledgeable, and passionate butcher like Cecka helps me appreciate the animal and connect to the meat I eat in a new way.”

  • Stephanie Hanson and Stephanie March

“With Cecka Parks talking about and learning how to break down a Chicken from the grocery store. It is a great skill to have and super economical. Loved Loved Loved doing this and learning how to sharpen my knife skills with Stephanie March - pun intended!”

  • Student Mitch Patterson

“The class was amazing. I took the class with a good friend and we had the best time. I learned so much about the industry, the process, anatomy, the cuts as well as techniques I can use in life. I’m so excited to learn more. Both myself and my friend and eager to take another course with Cecka. It was professional, clean, educational and fun. I would 100% recommend if you want to learn a new valuable life skill (as well as fill your freezer). The quality of the meat is amazing.
