This class will be partial demo and full hands-on participation. We will work through one side of a hog. Cecka will show how to break into primals (sections) and then we will split up and each group will get to work on a primal together, breaking down the sections into chops, roasts, steaks and grind. Knives and cutting boards will be provided (but feel free to bring your own!).
Location will be at City Food Studio in South MPLS. Cost $200/person. Limited to 7 students.
