Hog Breakdown Class March 1st 2025 2pm-5pm
This class will be partial demo and full hands-on participation. Cecka will show how to break the side of hog into primals (sections) and then we will split up and each group will get to work on a primal together, breaking down the sections into chops, roasts, steaks and grind. Knives and cutting boards will be provided (but feel free to bring your own!).
We will also talk about different culinary approaches to pork and how to use the less common cuts at home. We will grind some pork and talk about meat grinding in your own kitchen as well as curing your own pancetta and smoking the meat.

Class location will be City Food Studio in South MPLS.
Cost is $225 per person. This pays for instructors, rent, meat and snacks/drinks. Skill level is intermediate. It will be easier if you have some meat cutting or knife skills but that is not a requirement! Limited to 6 Students. Food/drinks provided. Time is approximately three hours.
Students go home with 12-15LB of locally-raised pork all ready for dinner or the freezer!
