Class location will be City Food Studio in South MPLS.

Cost is $225/person. This pays for instructors, rent, meat and snacks/drinks. Skill level is intermediate. It will be easier if you have some meat cutting or knife skills but that is not a requirement! Limited to 6 Students. Food/drinks provided. Time is approximately three hours. Students go home with 12-15LB of locally-raised lamb.

This class will be partial demo and full hands-on participation. We will work with a whole lamb and talk through how to break it down into primals and work with each half of the animal to get a variety of cuts, roasts, chops, etc. Lamb is a global meat and is a wonderful gateway to a variety of cuisines and culinary exploration. Each student will get a chance to participate in cutting, sawing, seaming and grinding. This class is best for those who want to learn more about whole animal butchery and how to utilize all of Lamb's benefits as well as hone in on a variety of knife skills.
